Recipe ingredients
- 1/3 cup (80 mL) olive oil*
- 1 Tbsp. (15 mL) liquid honey*
- 2 Tbsp. (30 mL) fresh squeezed lemon juice
- 1/2 tsp. (2 mL) ground cinnamon
- Salt and pepper to taste
- 594 mL chick peas, drained and rinsed*
- 1 cup (250 mL) cooked white rice*
- 2 green onions, sliced very thin
- 1 red sweet pepper, diced
- 1/2 cup (125 mL) raisins*
- 1/2 cup (125 mL) fresh chopped parsley.
Preparation
In a bowl, mix oil, honey, lemon juice, cinnamon, salt and pepper together. Set aside.
In a salad bowl, mix remaining ingredients together.
Mix dressing into salad.
Cover and refrigerate 1 hour before serving.
Suggestion
Raisins will be plumper and more tender if soaked in hot water for 3 min.* We recommend Selection and Irresistibles products.
