Recipe ingredients

  • 1/3 cup (80 mL) olive oil*
  • 1 Tbsp. (15 mL) liquid honey*
  • 2 Tbsp. (30 mL) fresh squeezed lemon juice
  • 1/2 tsp. (2 mL) ground cinnamon
  • Salt and pepper to taste
  • 594 mL chick peas, drained and rinsed*
  • 1 cup (250 mL) cooked white rice*
  • 2 green onions, sliced very thin
  • 1 red sweet pepper, diced
  • 1/2 cup (125 mL) raisins*
  • 1/2 cup (125 mL) fresh chopped parsley.

Preparation

In a bowl, mix oil, honey, lemon juice, cinnamon, salt and pepper together. Set aside.
In a salad bowl, mix remaining ingredients together.
Mix dressing into salad.
Cover and refrigerate 1 hour before serving.

Suggestion

Raisins will be plumper and more tender if soaked in hot water for 3 min.
