Recipe ingredients
- 1 250-g package ricotta cheese
- Juice of 1/2 lemon
- 2 garlic cloves, chopped
- 1 Tbsp. (15 mL) chopped fresh basil
- Salt and pepper to taste
- 8 sole fillets, about 3 oz. (90 g) each
- 1/2 red pepper, diced
- 3/4 cup (180 mL) coarsely chopped pitted black olives*.
Preparation
Preheat oven to 350°F/180°C.
In a bowl, mix lemon juice, garlic, basil, salt and pepper into cheese with a fork.
Spread cheese mixture over fillets.
Top with red pepper and black olives.
Roll fillets up and secure with a toothpick.
Place fish rolls on a lightly oiled cookie sheet.
Bake 18-20 min or until fish is opaque.
Serve fish with fresh lemon and basil.
