Recipe ingredients
- 1 340-g package crab-flavoured pollock, coarsely flaked
- 1 box (of about 35) unsalted soda crackers*, crumbled
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 lemon, juice and zest
- 1/2 cup (125 mL) orange juice*
- 3 Tbsp. (45 mL) chopped fresh oregano and parsley
- Salt and pepper to taste
- 1 whole 2-4 lb. (1-2 kg) salmon, head removed
Preparation
Preheat oven to 350°F/180°C.
In a large bowl, mix all ingredients together, except salmon. Season and set aside.
Rinse fish under running water and lay on its side in a lightly oiled baking dish.
Stuff fish with pollock mix. Close fish. Season with salt and pepper.
Cover with aluminum foil, shiny side oiled.
Bake for 45 minutes. Fish is cooked when flesh is pale pink and comes off the bone when touched.
Remove skin with a fork before serving.
Suggestion
