Recipe ingredients
- Dressing
- 1/4 cup (60 mL) freshly squeezed grapefruit juice
- 1/4 cup (60 mL) freshly squeezed lemon juice
- 1/4 cup (60 mL) Irresistibles extra virgin olive oil*
- 1 1/2 tsp. (7 mL) liquid honey*
- 1 1/2 tsp. (7 mL) orange rind
- 1 clove of garlic, chopped
- Salt and freshly ground black pepper to taste
- 4 cups (1 L) assorted lettuce
- 1 pink grapefruit, completely peeled and split into segments
- 1 white grapefruit, completely peeled and split into segments
- 1 lb. (450 g) cooked shrimp tail-on
- 3 Tbsp. (45 mL) fresh mint, chopped
Preparation
In a bowl, vigorously blend all the dressing ingredients; refrigerate.
Place the lettuce, grapefruit segments and shrimp on dishes.
Garnish with fresh mint and add the dressing.
