Recipe ingredients

  • 1/3 cup (80 mL) red onion, chopped
  • 1/3 cup (80 mL) mayonnaise
  • 1/4 cup (60 mL) basil pesto
  • 3 Tbsp. (45 mL) sun-dried tomatoes in oil, thinly sliced
  • 1 3/4 lb. (720 g) tilapia filets or any other firm-fleshed white fish

Preparation

Preheat the broiler. In a small bowl, mix all the ingredients except the fish.
Place the fish on a lightly oiled sheet and cover it with the mixture.
Grill on the middle rack for 7 minutes or until the tops of the filets are lightly browned.

Suggestion

Substitute the basil pesto and sun-dried tomatoes with 60 ml (1/4 cup) old-style mustard and 30 ml (2tbsp.) fresh dill.
