Recipe ingredients
- 1/3 cup (80 mL) all-purpose flour
- 1 tsp. (5 mL) salt
- 1 tsp. (5 mL) pepper
- 2 whole snappers, approximately 1 lb. (450 g) each, cleaned, scaled and deboned
- 3 Tbsp. (45 mL) fresh parsley or coriander, chopped
- 1 clove of garlic, crushed
- 1 Tbsp. (15 mL) paprika
- 1 1/2 tsp. (7 mL) powdered cumin
- 1/4 tsp. (1 mL) powdered cinnamon
- 1/4 tsp. (1 mL) powdered ginger
Preparation
In a deep fryer, heat oil to 190°C (375°F). In a large plastic bag, mix the flour, salt and pepper.
Place the fish in the bag one at a time and shake gently until well coated.
Set the fish aside, and place the rest of the ingredients in a small bowl. Mix well.
Fry the fish until it is golden brown, about 8 minutes.
Drain on a paper towel. Sprinklen both sides of the fish with the herb and spice mixture, coating well.
Suggestion
Snapper can be replaced by porgy or ocean perch.Origin: Indian
