Recipe ingredients
- 1 Tbsp. (15 mL) vegetable oil*
- 1 garlic clove, chopped
- 1 onion, chopped
- 1½ lb. (675 g) extra-lean ground beef
- 1½ cups (375 mL) salsa*
- 2 Tbsp. (30 mL) lime juice
- 1 Tbsp. (15 mL) fresh coriander or 1½ tsp. (7 mL) ground coriander
- Salt and pepper to taste
- 2 cups (500 mL) grated orange Cheddar*
- 8 7-in (17.5 cm) whole-wheat tortillas

Preparation
Preheat oven to 350oF (180oC).
In a large skillet, heat oil and brown onion and garlic. Add meat and cook thoroughly. Mix in 1 cup (250 mL) salsa, lime juice, coriander, salt and pepper.
Spoon mixture onto tortillas, top with cheese, reserving 1 cup (250 mL), and roll up tortillas.
Put tortillas in a baking dish.
Sprinkle with remaining cheese and sliced olives.
Bake about 15 min. Finally, brown cheese under the broiler for a few minutes.
Spoon remaining salsa over enchiladas before serving.
