Recipe ingredients
- 6 boneless chicken breasts, skin removed
- Adequate amount flour* seasoned with salt, pepper and paprika
- Adequate amount oil
- 2 cups (500 mL) fresh mushrooms, sliced
- 4 green onions, finely chopped
- 2 cups (500 mL) thick 15% cream
- 3/4 cup (180 mL) maple syrup
- 1 Tbsp. (15 mL) Dijon mustard
Preparation
Coat the chicken with seasoned flour.
Brown the chicken in a non-stick skillet in a small amount of oil until golden and cooked throughout. Keep warm.
In the same skillet, sauté the mushrooms until golden and add the green onion.
Add the cream, the maple syrup and the mustard, and reduce the heat. Mix well and simmer slowly until the sauce is reduced or has a creamy texture.
To serve, place the chicken breasts on a plate and cover with sauce.
Suggestion
Save time and clean-up. Place the seasoned flour in a plastic bag, add the chicken breasts and close the bag. Shake well to coat evenly.Serve with bell peppers, zucchini and turnips cooked en papillote with a small amount of butter, maple syrup, salt and pepper.
