Recipe ingredients
- 2 10-oz (285-g) bags of spinach
- 2 endives
- 1 apple
- 2 Tbsp. (30 mL) lemon juice
- 2 clementines, peeled and divided into sections
- 1 red onion, thinly sliced
- 1 yellow or red bell pepper cut into pieces
- Dressing
- 1 tsp. (5 mL) Dijon mustard
- 2 Tbsp. (30 mL) maple syrup
- 2 Tbsp. (30 mL) balsamic vinegar*
- 1/3 cup (80 mL) olive oil*
- Salt and pepper to taste
Preparation
Wash, drain and remove stems from spinach.
Separate endive leaves, mince and place in a salad bowl with the spinach.
Cut the apple into cubes and toss with lemon juice. Add to the spinach mixture.
Add the clementines, onion and bell pepper.
Toss with dressing and serve.
Dressing
In a small bowl, whisk together the mustard, maple syrup and balsamic vinegar.
Slowly pour the oil whisking constantly to obtain a smooth mixture.
Add salt and pepper to taste.
Suggestion
Substitute strawberries for clementines, and avocados for apples in season. Toss the avocados with lemon juice.Serve with slices of French bread.
