Recipe ingredients
- 6 chicken tournedos*
- 1 red apple, finely sliced
- 1 cup (250 mL) water
- 1 tsp. (5 mL) chicken concentrate
- 1/2 stalk of celery, chopped
- 2 slices of ginger, finely chopped
- 1/2 tsp. (2 mL) corn starch*
- 1 tsp. (5 mL) cold water
- 1/3 cup (80 mL) smooth peanut butter*
- Pepper to taste
Preparation
Preheat the oven to 350°F (180°C).
In a pan, place the tournedos on slice of apple and bake for about 30 minutes or until a meat thermometer reads 170°F (77°C).
In a fryng pan, boil the water.
Add the concentrate, celery and ginger finely chopped.
Simmer 5 minutes.
Mix the corn starch in water.
Add to the bouillon and cook 5 minutes.
Add smooth peanut butter; season to taste.
Spoon over tournedos and serve immediately.
