Recipe ingredients
- 5 oz. (150 g) plain goat's cheese
- 3 Tbsp. (45 mL) olive oil*
- 1 garlic clove, minced
- 2 Tbsp. (30 mL) chopped fresh mint or
- 1 Tbsp. (15 mL) Irresistible dried mint*
- 1/4 cup (60 mL) chopped walnuts
- 8 lamb chops
- To taste salt and pepper
Preparation
Preheat oven to 400°F/205°C.
In a bowl, mix cheese with 2 Tbsp. (30 mL) olive oil, garlic, mint and walnuts. Season and set aside.
In a skillet, heat remaining oil and brown chops 1 minute per side.
In a baking dish, place chops and cover with cheese mixture.
Bake about 10 minutes depending on desired degree of doneness.
