Recipe ingredients
- 3/4 cup (180 mL) peeled, grated Granny Smith apples, packed tight
- 1/3 cup (80 mL) unsalted butter, softened*
- 1/2 cup (125 mL) sugar
- 1 egg, beaten
- 2 drops of vanilla extract
- 2 cups (500 mL) all-purpose flour*
- A few drops of green food colouring
Preparation
Pat grated apples with paper towels to remove excess moisture. Set aside.
In a bowl, cream butter and sugar together. Beat in egg, vanilla extract and apples. Mix in flour gradually. Add a few drops of food colouring.
Knead the dough until consistency is smooth and even.
Refrigerate for 2 hrs.
Preheat oven to 350°F/180°C.
Roll dough out ½ in. (1 cm) thick on a floured surface.
Cut dough with a clover leaf cookie cutter.
Bake cookies on a greased baking sheet for about 20 min.
Serve with Irish coffee.
