Recipe ingredients
- 1/2 lb (225 g) dark chocolate 70 % cocoa
- 3 egg yolks
- 1/4 cup (60 mL) sugar
- 2 Tbsp. (30 mL) hazelnut liqueur (Frangelico)
- 3 Tbsp. (45 mL) pure maple syrup
- 250 mL (1 cup) (250 mL) whipping cream *
- 6 egg whites
- Topping:
- Whipped cream to taste
- Grated chocolate to taste
- Whole hazelnuts to taste
Preparation
In a double boiler, melt chocolate.
In the mean time, beat egg yolks and sugar with electric mixer until frothy. Slowly add melted chocolate and hazelnut liqueur and continue beating. Set aside.
In another bowl, whip cream until nearly stiff and add maple syrup. Continue whipping cream until stiff.
In another bowl, whip egg whites into stiff peaks
Delicately add whipped cream to chocolate using a spatula. Then add egg whites.
Pour into cups or glasses and refrigerate at least 2 hours.
Before serving, top with whipped cream, grated chocolate and hazelnuts to taste.
