Recipe ingredients
- 2 eggs, hard boiled
- 1 bunch (1 1/2 cup - 375 mL) cress, rinsed and drained
- 2 tsp. (10 mL) capers, drained
- 1/4 cup (60 mL) red onion, chopped
- 1/4 cup (60 mL) yellow pepper, diced
- 1/3 cup (80 mL) olive oil *
- 1 Tbsp. (15 mL) red wine vinegar *
- Salt and ground black pepper to taste
Preparation
Shell eggs and cut into medium size pieces. Add lightly chopped cress but avoid adding long stems. Add remaining ingredients. Check seasoning. Serve with toasted croutons or rusks.
