Recipe ingredients

  • 2 large, unpeeled potatoes, washed
  • 2 Tbsp. (30 mL) olive oil*
  • Salt and pepper to taste
  • 2 tsp. (10 mL) herbes de Provence
  • 3/4 cup (180 mL) grated Cheddar*
  • 1/2 cup (125 mL) grated Parmesan*
  • 4 slices of ham, cut into small squares
  • 5 green onions, minced

Preparation

Preheat oven to 375°F (190°C).
Slice potatoes 1/4 in. (6 mm) thick. Pat dry with paper towels and lay out on a baking sheet lined with parchment paper.
Brush potatoes with olive oil and season with salt, pepper and herbes de Provence.
Bake 15 minutes.
Meanwhile, in a bowl, mix Cheddar, Parmesan, ham and green onions together. Spread over potatoes.
Bake another 5 minutes or until cheese is melted. Serve.

Suggestion

Replace Cheddar and Parmesan with Gruyère and Gouda for an interesting variation.
