Recipe ingredients

  • 2 large, unpeeled red apples, diced
  • 1 cup (250 mL) diced St-Paulin cheese
  • 1 cup (250 mL) sliced celery
  • 1/2 cup (125 mL) walnut pieces, toasted*
  • Lettuce leaves to cover 6 plates
  • Salad Dressing
  • 1/2 cup (125 mL) plain yogurt*
  • 1/2 cup (125 mL) sour cream*
  • 2 Tbsp. (30 mL) honey*
  • 2 tsp. (10 mL) lemon juice
  • 1 tsp. (5 mL) lemon zest

Preparation

In a bowl, mix dressing ingredients together and refrigerate minimum one hour.
Just before serving, mix apples, St-Paulin, celery and walnuts together.
Line 6 salad plates with lettuce leaves and top with apple-cheese mixture.
Drizzle with salad dressing and mix gently together.

Suggestion

Replace St-Paulin with Oka for an interesting variation.
