Recipe ingredients

  • 1 fresh 4 1/2-lb. (2-kg) fryer chicken
  • 1/2 cup (125 mL) maple syrup*
  • 2 Tbsp. (30 mL) Dijon mustard*
  • 4 garlic cloves, minced
  • 4 tsp. (20 mL) dry basil
  • 1 Tbsp. (15 mL) fresh ground black pepper
  • Knobs of butter* to taste

Preparation

Preheat oven to 350°F/180°C.
Wash chicken inside and out under cold running water and pat dry.
Set chicken on a grill in a casserole and roast uncovered for 30 min.
In a bowl, mix remaining ingredients, except butter, together. Brush maple sauce on chicken.
Dot with knobs of butter and roast uncovered for another 30-40 min.
Baste chicken with maple sauce during roasting.
Serve with puréed sweet potatoes and green beans.

Suggestion

Note: Set aside some of the sauce first boiled and serve with the chicken.
