Recipe ingredients
- 4 haddock fillets
- Juice of 1 lemon
- Salt, pepper and dill to taste
- 2 Tbsp. (30 mL) Irresistibles extra virgin olive oil*
- 2 Tbsp. (30 mL) tomato sauce*
- Juice of 1 lemon
- 1 garlic clove, minced
- 2 tomatoes, seeded and cubed
- 2 Tbsp. (30 mL) Irresistibles capers*, drained
- 1 Tbsp. (15 mL) sliced, pitted black olives*
Preparation
Drizzle fillets with lemon juice and sprinkle with salt, pepper and dill.
In a skillet, heat half of the oil and cook fillets about 2-3 minutes. per side.
Meanwhile, in a small pan, heat remaining ingredients over low heat until hot.
Serve haddock fillets with caper sauce. Snow peas and herbed lemon rice make good accompaniments.
