Creamy Tilapia Soup

Recipe ingredients
- 1/2 tsp. (2 mL) saffron
- 2 tsp. (10 mL) olive oil*
- 1 onion, minced
- 1 garlic clove, minced
- 1 large potato, diced
- 5 cup (1,25 L) fish stock
- 1 lb. (450 g) boneless tilapia fillets, cubed
- 1 cup (250 mL) table cream*
- Salt and white pepper to taste
Preparation
In a small bowl, soak saffron in 2 Tbsp. (30 mL) of boiling water.
In a pan, heat oil and cook onion over medium-high heat until glassy. Add garlic and cook 1 minute. Stir in potato.
Pour fish stock into pan, bring to a boil then add saffron and soaking liquid. Simmer for 10 minutes.
Add cubed tilapia and cook about 5 minutes or until fish is tender and opaque.
Add cream, salt and pepper. Heat gently before serving.
Suggestion
Substitute 1 cup of white wine for 1 cup of fish stock and garnish each bowl with chopped fresh chives.* We recommend Selection and Irresistibles products.
