Mahi-Mahi with Blue Cheese

Recipe ingredients
- 4 fresh mahi-mahi fillets of approx. 6 oz. (180 g) each
- 1 lemon, halved
- 3 Tbsp. (45 mL) butter*
- 4 oz. (120 g) Ermite blue cheese
- 1/4 cup (60 mL) breadcrumbs
- Pepper to taste
Preparation
Preheat the oven to 350°F/ 175°C.
Rub the lemon over both sides of the mahi-mahi fillets. Set aside.
In a food processor, blend the butter, cheese, breadcrumbs and pepper. Set aside.
Place the fillets on a cooking sheet. .
Cook 5 min. and turn over.
Divide the cheese mix and place on each of the fillets and continue cooking for 5 min. or until the fish is cooked.
