Recipe ingredients
- 3 Tbsp. (45 mL) canola oil*
- 4 fresh monkfish fillets of approx. 6 oz. (180 g) each
- 1 garlic clove, finely chopped
- 1 Italian tomato, seeded and diced
- 2 avocados, peeled and diced
- 1 Tbsp. (15 mL) fresh lemon juice
- 1 Tbsp. (15 mL) balsamic vinegar*
- 2 Tbsp. (30 mL) fresh coriander, chopped
- Salt and pepper to taste
Preparation
In a frying pan, heat 2 Tbsp. (30 mL) of oil and cook the fillets 4 min. on each side.
Remove from pan and keep warm.
In the same frying pan, heat the remaining oil and brown the garlic. Add the tomato, avocado, lemon juice and balsamic vinegar.
Cook 1-2 min. Add the coriander. Salt and pepper to taste. Mix.
Divide the avocado mixture in four and place on monkfish fillets.
