Recipe ingredients
- 1 Tbsp. (15 mL) vegetable oil*
- 1/2 onion, chopped
- 1 garlic clove, chopped
- 1/2 red pepper, cubed
- 1 9-in. (23-cm) pie crust*
- 1/2 lb. (225 g) crab-flavoured pollock flakes
- 3/4 cup (180 mL) chopped fresh spinach
- 3 eggs, lightly beaten
- 2/3 cup (160 mL) milk
- 1 cup (250 mL) grated strong cheddar
- 1 Tbsp. (15 mL) chopped fresh dill or 1 1/2 tsp. (7 mL) dry dill
- Salt and pepper to taste
Preparation
Preheat oven to 350°F/180°C.
In a skillet, heat oil and cook onion, garlic and red pepper on medium for 3 min. Transfer vegetables to pie crust. Add spinach and pollock. Set aside.
In a bowl, mix eggs, milk, cheese, dill, salt and pepper together.
Pour over vegetables.
Bake about 50 min.
Suggestion
Serve with a nice green salad.Occasion: Brunch
