Recipe ingredients

  • 2 Tbsp. (30 mL) vegetable oil*
  • 4 fresh snapper fillets
  • 1 shallot, chopped
  • 1 garlic clove, chopped
  • 1 cup (250 mL) corn*
  • 1 cup (250 mL) finely diced fennel (as small as corn kernels)
  • 1 red pepper, finely diced (as small as corn kernels)
  • 2 Tbsp. (30 mL) lime or lemon juice
  • 3 Tbsp. (45 mL) brown sugar
  • 1 cup (250 mL) canned diced tomatoes drained*
  • 1 Tbsp. (15 mL) chopped fresh coriander

Preparation

In a skillet, heat 1 Tbsp. (15 mL) oil and cook snapper fillets 2 min. per side or until fish can be easily flaked with a fork. Remove and keep warm.
Add remaining oil and cook shallot and garlic. Add corn, fennel and pepper and cook 3 min.
Mix lime juice and brown sugar together. Stir into vegetables. Add tomatoes and cook 2 min. more. Stir in coriander. Salt and pepper to taste.

Suggestion

Serve fish with vegetable salsa and Chinese noodles.
