Poached Pears with Chocolate Sauce

Recipe ingredients
- 4 firm, fresh pears
- 1 lemon, halved
- 3 cups (750 mL) white wine
- 1 cup (250 mL) granulated sugar
- 1/2 tsp. (2 mL) ground nutmeg
- 3 oz. (90 g) semi-sweet chocolate
- 1/4 cup (60 mL) unsalted butter
- 1 Tbsp. (15 mL) strong brewed coffee
- 1 cup (250 mL) icing sugar
- 1/2 cup (125 mL) condensed milk
- 1 tsp. (5 mL) vanilla extract
Preparation
Peel and core pears on the underside.
Rub pears with lemon to prevent discoloration. Set aside.
Combine wine, sugar and nutmeg in a saucepan and bring to a boil.
Lower heat and poach pears for 8 minutes. Do not boil.
Remove from heat and cool pears in the syrup.
Chocolate Sauce
Melt butter and chocolate in a pan over low heat. Remove from heat.
Whisk in coffee, icing sugar and milk.
Return pan to heat and bring to a boil. Lower heat and cook 5 minutes on low, stirring constantly.
Remove from heat and stir in vanilla.
Serve hot with pears.
Suggestion
Using canned pears instead of poached fresh pears saves time. The luscious taste of wine-poached pears is well worth the effort though.* We recommend Selection and Irresistibles products.
