Recipe ingredients
- Dressing:
- 1/3 cup (80 mL) olive oil*
- 2/3 cup (160 mL) plain yogurt*
- 4 tsp. (20 mL) each: wine vinegar* and fresh-squeezed lemon juice
- 1 1/2 tsp. (7 mL) Dijon mustard*
- Salt, pepper and fresh or dried mint to taste
- 3 small red apples, sliced
- 2 stalks celery, chopped
- 1 1/4 cups (310 mL) red and green seedless grapes, cut in two
- 2/3 cup (160 mL) walnuts*, coarsely chopped
- 1/3 cup (80 mL) raisins*
- 3 cups (750 mL) alfalfa sprouts
- 3 cups (750 mL) leaf lettuce
Preparation
In a bowl, mix dressing ingredients together.
Add apples, celery, grapes, walnuts and raisins. Set aside.
Divide leaf lettuce and alfalfa sprouts among four plates. Top with apple-grape salad.
