Recipe ingredients
- 2 Tbsp. (30 mL) olive oilIrresistible*
- 4 salmon fillets
- 1 red onion, diced
- 3 ripe pears (Bartlett or Bosc), diced
- 2 tsp. (10 mL) minced fresh mint
- 1 Tbsp. (15 mL) fresh-squeezed lemon juice
- 1/4 cup (60 mL) apple juice*
- Salt and pepper to taste
Preparation
In a skillet, heat 1 Tbsp. (15 mL) oil and cook salmon fillets 3-4 min. per side or until flesh can be easily flaked with a fork. Remove and keep warm.
In the same skillet, heat remaining oil and cook onion on medium heat. Add pears and cook 2 min. Stir in mint, lemon juice and apple juice. Season to taste.
Simmer 1 min.
Top fillets with pear mixture and serve with lemon-pepper linguine.
