Recipe ingredients
- Marinade :
- 3 Tbsp. (45 mL) olive oil*
- 3 Tbsp. (45 mL) fresh lemon juice
- 1 tsp. (5 mL) lemon rind, grated
- 3 Tbsp. (45 mL) fresh basil, chopped
- 2 garlic cloves, chopped
- Salt and pepper to taste
- 2 fresh Blue Marlin steaks, cut in 1 in. (2.5 cm) cubes
- 12 red onion quarters
- 8 cubes each: orange and yellow peppers
- 8 red cherry tomatoes
Preparation
In a shallow pan, combine all marinade ingredients and add the cubes of blue marlin.
Refrigerate for 2 hrs.
Preheat the barbecue to medium.
On skewers, place the fish pieces alternating with the vegetables.
Cook 5-6 min. per side. Turn only once during cooking.
Place the brochettes on a bed of mesclun and serve with rice.
