Recipe ingredients

  • Marinade :
  • 3 Tbsp. (45 mL) olive oil*
  • 3 Tbsp. (45 mL) fresh lemon juice
  • 1 tsp. (5 mL) lemon rind, grated
  • 3 Tbsp. (45 mL) fresh basil, chopped
  • 2 garlic cloves, chopped
  • Salt and pepper to taste
  • 2 fresh Blue Marlin steaks, cut in 1 in. (2.5 cm) cubes
  • 12 red onion quarters
  • 8 cubes each: orange and yellow peppers
  • 8 red cherry tomatoes

Preparation

In a shallow pan, combine all marinade ingredients and add the cubes of blue marlin.
Refrigerate for 2 hrs.
Preheat the barbecue to medium.
On skewers, place the fish pieces alternating with the vegetables.
Cook 5-6 min. per side. Turn only once during cooking.
Place the brochettes on a bed of mesclun and serve with rice.
