Recipe ingredients

  • 1 Tbsp. (15 mL) olive oil*
  • 2 cloves garlic, chopped
  • 1 onion, halved, sliced
  • 10 slices pancetta, diced
  • 1 large carrot, sliced
  • 2 Tbsp. (30 mL) butter*
  • 2 bulbs fennel, trimmed, quartered
  • 2 1/2 cups (625 mL) chicken broth *, heated
  • Salt and pepper to taste.

Preparation

Preheat oven to 375°F/190oC.
In a frying pan, heat oil and brown garlic and onion 1 minute. Add pancetta and carrot; cook 1 to 2 minutes. Transfer to a square Pyrex dish 23 cm x 23 cm (9 in. x 9 in.)
In the same frying pan, melt butter. Lightly brown fennel quarters. Add vegetables to Pyrex dish.
Add chicken broth level with fennel.
Cover and braise 30 to 35 minutes.
Season and serve right away.
