Recipe ingredients
- 1/2 bunch fresh cress
- 3 oranges
- 2 endives
- 2 cups (500 mL) mixed lettuce (mesclun)
- 1 white onion, minced
- Pine nuts to taste
- Yoghurt Dressing
- 1/4 cup (60 mL) firm plain yoghurt
- 1 Tbsp. (15 mL) 15 % cream *
- 1 Tbsp. (15 mL) orange juice*
- Salt and pepper to taste
Preparation
In a bowl, mix dressing ingredients together. Set aside.
Wash and trim watercress.
Peel zest from oranges. Separate into segments, removing pith and membranes.
In a salad bowl, toss watercress, endive leaves, mixed greens, onion, pine nuts, orange zest and segments together.
Serve with dressing.
