Recipe ingredients

  • 1/2 bunch fresh cress
  • 3 oranges
  • 2 endives
  • 2 cups (500 mL) mixed lettuce (mesclun)
  • 1 white onion, minced
  • Pine nuts to taste
  • Yoghurt Dressing
  • 1/4 cup (60 mL) firm plain yoghurt
  • 1 Tbsp. (15 mL) 15 % cream *
  • 1 Tbsp. (15 mL) orange juice*
  • Salt and pepper to taste

Preparation

In a bowl, mix dressing ingredients together. Set aside.
Wash and trim watercress.
Peel zest from oranges. Separate into segments, removing pith and membranes.
In a salad bowl, toss watercress, endive leaves, mixed greens, onion, pine nuts, orange zest and segments together.
Serve with dressing.
