Recipe ingredients
- 4 x 6 oz. (180 g) halibut fillets Salt and pepper to taste
- Flour as needed*
- 2 Tbsp. (30 mL) olive oil*
- Olive Sauce
- 1 shallot, chopped
- 1 Tbsp. (15 mL) chopped fresh thyme
- 1 Tbsp. (15 mL) olive oil*
- 1/2 yellow courgette, diced
- 1/2 zucchini, diced
- 1/2 cup (125 mL) sliced pitted green olives *
- 1/2 cup (125 mL) sliced pitted black olives *
- 1/2 cup (125 mL) 15 % cream
- Salt and pepper to taste
Preparation
In a frying pan, brown shallot and thyme in oil 1 minute. Add courgette, zucchini and olives; continue cooking 1 minute.
Add cream and bring to a boil; reduce 1 to 2 minutes. Season. Reserve.
Salt and pepper halibut fillets; lightly flour.
In a frying pan, heat oil and cook halibut fillets about 2 to 3 minutes on each side or until flesh is opaque.
Pour olive sauce over fish.
