Coquilles Saint Jacques with Leeks

Recipe ingredients
- 1 large onion, sliced thin
- 2 cloves of garlic, chopped
- 1/2 package of sliced leeks Les Cultures de Chez Nous
- Fresh thyme to taste
- Chopped fresh parsley to taste
- 250 ml (1 cup) butter
- 1 cup (250 mL) dry white wine
- 24 small scallops (same size)
- 1 cup (250 mL) breadcrumbs
- 1/4 cup (60 mL) chopped fresh parsley
- 6 scallops shells
Preparation
In a frying pan, brown onion, garlic, leeks and herbs in half the butter.
Pour in the white wine and cook over low heat approx. 15 minutes.
Add scallops to sauce.
Cook for a few minutes.
Scallops are cooked when their flesh is opaque and their centre is slightly transparent. Do not overcook them or they become rubbery.
Work the rest of the butter with breadcrumbs and chopped parsley.
Pour the scallop sauce in the shells, cover with breadcrumbs mixture and brown a few seconds under broiler.
Serve hot.
