Recipe ingredients
- 2 Tbsp. (30 mL) olive oil
- 2 packages of sliced leeks Les Cultures de Chez Nous
- 2 shallots, peeled and cut in four
- 4 large cooked potatoes, peeled and cut in thick slices
- 1/2 red pepper, grilled and sliced
- 1 Tbsp. (15 mL) fresh basil, chopped
- Salt and grounded pepper to taste
Preparation
Heat oil in a large pan over medium heat.
Cook leeks and shallots 2 minutes.
Add potatoes and red peppers.
Season well and cook 8-10 minutes over medium heat.
Do not burn leeks; lower heat if necessary.
Add basil, season and continue cooking 2-3 minutes. Serve.
