Recipe ingredients

  • 12 slices of 16 cereals organic bread*
  • 1/2 cup (125 mL) pesto
  • 2 Tbsp. (30 mL) olive oil*
  • Topping:
  • 3/4 cup (180 mL) red onion, finely chopped
  • 3 Italian tomatoes, sliced
  • 1 cup (250 mL) zucchini or fresh mushrooms, thinly sliced
  • Fresh ground pepper to taste
  • 5 oz (150 g) goat's cheese, in small chunks or goat's milk firm cheese, sliced

Preparation

Preheat oven to 400ºF (205ºC).
Mix the pesto and the olive oil.
Place the slices of bread on a cookie sheet and spread the pesto on each slice.
Spread the topping evenly on each slice, ending with the goat's cheese.
Bake for 8 minutes, or until cheese is golden.
