Broiled Marinated Four-Cheese Brochettes

Recipe ingredients
- 10 Irresistible coriander seeds*, ground
- 5 green peppercorns, crushed
- 3 garlic cloves
- 1 Irresistible bay leaf *
- 1 pinch fresh thyme
- 1 pinch chopped fresh oregano
- 1/4 cup (60 mL) white wine
- 4 bocconcini, cut in two
- 8 oz. (225 g) medium cheddar*, cut into 4 pieces
- 1 Doré-mi cheese, cut into 4 cubes
- 1 small Paillot de Chèvre cheese, cut into 4 pieces
- 1/2 cup (125 mL) Irresistible extra virgin olive oil*
- 2 Tbsp. (30 mL) Irresistible cider vinegar*
Preparation
Simmer coriander, pepper, garlic, bay leaf, thyme and oregano in wine for 2 minutes. Cool and set aside.
Thread cheeses, alternating them, onto wooden skewers. Put the skewers in a glass dish.
Pour spiced wine, oil and cider vinegar over the brochettes.
Marinate 2 hours in the refrigerator.
Preheat oven to broil.
Remove brochettes from marinade and broil quickly, removing before cheese melts.
Serve immediately.
