Recipe ingredients
- 8 tsp. (40 mL) butter*
- 8 tsp. (40 mL) flour
- 1 1/4 cups (300 mL) milk
- White pepper and nutmeg to taste
- 1/4 cup (60 mL) Canadian Bénédictin-type blue cheese, crumbled
- 5 egg yolks*
- 5 egg whites*
- Sufficient butter*
- Sufficient flour
Preparation
Preheat oven to 400°F (205°C).
In a skillet, melt butter and stir in flour, blending thoroughly.
Stir in milk. Season with white pepper and nutmeg.
Cook, stirring, until sauce thickens.
Remove from heat and cool.
Add blue cheese to sauce.
Stir in egg yolks.
Beat egg yolks until they form stiff peaks.
Using a spatula, gently fold egg whites into the sauce.
Butter and flour ramekins.
Pour batter into ramekins.
Bake 30 minutes without opening oven.
Serve immediately.
