Recipe ingredients

  • 4 Olymel Italian sausages, parboiled
  • 1 6-oz. bag fresh spinach, stems removed, torn up
  • 2 tomatoes, sliced
  • 1 small red onion, sliced thin
  • 3 Tbsp. (45 mL) olive oil*
  • 1 Tbsp. (15 mL) lemon juice
  • 1 garlic clove, chopped
  • Salt and pepper to taste
  • 2 Tbsp. (30 mL) pine nuts
  • Shaved Parmesan cheese to taste

Preparation

Preheat barbecue to medium.
Prick sausages with a fork and grill 8-10 minutes or until cooked through.
Cool slightly, then score without cutting all the way through. Set aside.
Make a bed of spinach in 4 plates.
Arrange tomato and onion slices on spinach.
Mix oil, lemon juice, garlic, salt and pepper together. Pour over salad.
Lay a warm sausage in the centre of each salad.

Suggestion

Sprinkle with pine nuts and shaved Parmesan.
