Recipe ingredients
- Marinade:
- 1/3 cup (80 mL) olive oil*
- 2 Tbsp. (30 mL) balsamic vinegar*
- 3 garlic cloves, minced
- 4 tsp. (20 mL) fresh oregano
- Salt and pepper to taste
- 4 endives, cut in two lengthways
- 12 fresh asparagus
- 12 slices eggplant, about 1 in. (2.5 cm) thick each
- 4 Olymel mild Italian sausages
Preparation
In a bowl, mix marinade ingredients together. Add vegetables and chill 30 min.
Meanwhile, prick sausages with a fork.
In a big pot of water, boil sausages 5 min. Drain.
Finish cooking sausages on the barbecue over medium heat, about 5-7 min. Slice diagonally and set aside.
Drain vegetables and grill them 3-5 min. per side for the endives, 2-4 min. per side for the asparagus and 5-8 min. per side for the eggplant.
Suggestion
Drizzle with a little olive oil and balsamic vinegar to taste.Eat hot.
