Recipe ingredients

  • Marinade:
  • 1/3 cup (80 mL) olive oil*
  • 2 Tbsp. (30 mL) balsamic vinegar*
  • 3 garlic cloves, minced
  • 4 tsp. (20 mL) fresh oregano
  • Salt and pepper to taste
  • 4 endives, cut in two lengthways
  • 12 fresh asparagus
  • 12 slices eggplant, about 1 in. (2.5 cm) thick each
  • 4 Olymel mild Italian sausages

Preparation

In a bowl, mix marinade ingredients together. Add vegetables and chill 30 min.
Meanwhile, prick sausages with a fork.
In a big pot of water, boil sausages 5 min. Drain.
Finish cooking sausages on the barbecue over medium heat, about 5-7 min. Slice diagonally and set aside.
Drain vegetables and grill them 3-5 min. per side for the endives, 2-4 min. per side for the asparagus and 5-8 min. per side for the eggplant.

Suggestion

Drizzle with a little olive oil and balsamic vinegar to taste.
Eat hot.
