Recipe ingredients
- 19 oz (540 mL) Primo green lentils, rinsed and drained
- 19 oz (540 mL) Primo white beans, rinsed and drained
- 1 cup (250 mL) raisins
- 1/2 cup (125 mL) dried apricots, cut into bits
- 1/2 cup (125 mL) chopped cashew nuts or pecans
- 1/2 cup (125 mL) mayonnaise*
- 1/2 cup (125 mL) plain yogurt
- 1 cup (250 mL) cottage cheese
- 1 lemon juice
- Salt and pepper to taste
Preparation
In a mixing bowl, gently mix all ingredients.
Spoon into small pita pockets.
Serve with seasonal vegetables.
