Recipe ingredients

  • 2 large ripe avocados
  • Juice of 1/2 lemon
  • 1 2/3 cup (410 mL) canned stewed tomatoes
  • 1 dried green onion, chopped
  • 1/2 tsp. (2 mL) granulated white sugar
  • 1 tsp. (5 mL) fresh chopped thyme
  • Ground black pepper to taste

Preparation

Cut avocados in half; remove pit and peel; slice; sprinkle with lemon juice.
In the blender jar, put all sauce ingredients; blend until smooth.
Strain and refrigerate 30 minutes.
Serve avocado slices topped with sauce.

Suggestion

This tomato sauce can be frozen up to 6 months.
