Recipe ingredients
- 4 medium tomatoes
- 1/4 cup (60 mL) olive oil*
- 2 cloves garlic, crushed
- 3 medium zucchinis, sliced
- 1/2 cup (125 mL) chicken broth
- 1/2 tsp. (2 mL) dried oregano
- Ground black pepper to taste
- 1/2 cup (125 mL) partially skimmed mozzarella*.
Preparation
Blanch tomatoes in boiling water 12 seconds; peel, cut in wedges and seed.
In a large frying pan, heat olive oil; brown garlic.
Add zucchinis; sauté 6 to 7 minutes, stir until slightly browned.
Add tomatoes, chicken broth, oregano and pepper; cover and simmer 4 minutes.
Transfer to an oven dish; top with mozzarella and oven-broil.
Suggestion
Do not overcook zucchinis so they remain crisp.Origin: Italian
