Recipe ingredients

  • 1 rack of lamb, 6 loin ribs
  • 2 Tbsp. (30 mL) Irresistibles Dijon mustard*
  • 3 Tbsp. (45 mL) chopped parsley
  • 2 cloves garlic, chopped
  • 3 Tbsp. (45 mL) fine fresh breadcrumbs
  • 1 Tbsp. (15 mL) melted butter*
  • 2/3 cup (150 mL) beef consommé*

Preparation

Preheat the oven to 350ºF (180ºC).
Brush the rack of lamb with mustard.
Mix breadcrumbs with parsley and garlic; coat the meat with this mixture and put in a roasting pan.
Sprinkle with melted butter.
Roast 45 minutes to 1 hour, or until cooked to taste.
Transfer rack of lamb to a serving platter and keep hot.
Pour the beef consommé into roasting pan: over high heat, deglaze with a few minutes.

Suggestion

Lamb is most flavourful when cooked pink.
