Recipe ingredients

  • 2 tsp. (10 mL) olive oil
  • 1/2 cup (125 mL) pine nuts
  • 4 boneless fresh marinated chicken breasts
  • 1 medium tomato
  • 1 Tbsp. (15 mL) chicken concentrate
  • 2 Tbsp. (30 mL) white wine
  • 1 Tbsp. (15 mL) Dijon mustard

Preparation

In a pan, mix oil and pine nuts, grill 1 minute.
Add the rest of the ingredients; bring to a boil.
Simmer 4 minutes; remove from heat.
Brush the boneless fresh marinated chicken breasts with the pine nut sauce.
Put the chicken breasts on a sheet of oiled aluminium foil; cook 3 minutes per side.
To roast
In a preheated frying pan, put chicken breasts; brown on each side.
Brush with the pine nut sauce.
Finish cooking in the oven at 350ºF (180ºC) 20 to 25 minutes.

Suggestion

Bulghur Sauce: a mixture of oil, tomatoes, mint, onion, garlic, salt and pepper.
