Recipe ingredients

  • 4 steaks shoulder of lamb
  • 4 ripe mangos, cut in halves
  • 4 sticks fresh rosemary
  • Marinade
  • Zest and juice from one orange
  • 1/4 cup (60 mL) red wine
  • 2 Tbsp. (30 mL) olive oil
  • 2 Tbsp. (30 mL) fresh mint, chopped 1/2 tsp. (2.5 mL) cinnamon, ground 1/2 tsp. (2.5 mL) fresh ginger, ground
  • 4 sticks fresh rosemary

Preparation

In a bowl, combine ingredients of marinade. Keep 2 Tbsp. (30 mL) for cooking. Place lamb steaks and mangos in a dish and pour marinade over; cover and refrigerate for an hour.
Preheat grill, medium heat. Drain lamb steaks and mangos.
Place one stick of rosemary on each lamb steak and grill for 3 minutes on one side. Turn, brush with remaining marinade and grill for 3 minutes.
Grill mangos and serve with lamb. Serve with fresh mint
and slices of oranges.
