Recipe ingredients
- 2 cups (500 mL) cold mashed potatoes
- 1 Tbsp. (15 mL) butter*
- 1/4 cup (60 mL) milk
- Salt and pepper to taste
- 1 lb. (450 g) flavoured pollock, chopped
- 1 cup (250 mL) grated Gruyère cheese
- 1/2 onion, chopped
- 1 egg*, beaten
- 2 Tbsp. (30 mL) chopped fresh parsley
- 1/3 cup (80 mL) all-purpose flour*
- 2 eggs*, beaten
- 3/4 cup (180 mL) breadcrumbs*
- Peanut oil* for frying
Preparation
In a bowl, mix first 3 ingredients. Season to taste.
Mix in 5 following ingredients.
Make 8 croquettes. Chill 1 hr.
Dip each croquette in flour, then beaten eggs and finally breadcrumbs.
In a big skillet, heat oil and fry croquettes 2-3 min.
Drain on paper towels.
Suggestion
Bake croquettes 20 min. in a 400°F/200°C oven for a healthier alternative.* We recommend Selection and Irresistibles products.
