Recipe ingredients
- 1/4 cup (60 mL) extra virgin olive oil
- 2 corn on the cob
- 1 red hot pepper, cut in brunoise
- 1 mango, cut in brunoise
- 1/2 red onion, cut in brunoise
- 1 English cucumber, peeled, seeds removed and cut in bruinoise
- 2 Italian tomatoes, seeds removed, cut in brunoise
- 1 Tbsp. (15 mL) cider vinegar
- 3 Tbsp. ( 45 mL) fresh coriander or flat fresh parsley
- Tobasco sauce to taste
- Salt and pepper to taste
Preparation
Preheat barbecue.
Use half the oil to coat the cobs of corn and grill at a high temperature for 4 minutes, turning frequently to add colour and flavour to the kernels. Cool for 3-4 minutes and use a knife to remove kernels.
Place the grilled corn with the vegetables and fruit in a large bowl and add vinegar, remainder of oil, herbs, Tabasco, salt and pepper to taste.
