Recipe ingredients

  • 8 mild Italian-style sausages
  • 1/4 cup (60 mL) extra light olive oil *
  • 2 large onions, finely chopped
  • 1 1/2 cup (375 mL) converted rice
  • 3 cups (750 mL) chicken broth
  • 2 oranges, peeled and quartered
  • 24 black Kalamata olives, pitted
  • Pepper to taste

Preparation

In a pan, cover pricked sausages with water; simmer over low heat about 10 minutes to degrease. Drain.
In a frying pan, heat 30 mL (2 Tbsp.) oil; brown sausages until golden brown, about 3 to 4 minutes. Set aside.
In the same pan, heat the rest of the oil and brown onions.
Add rice and cook without browning.
Add chicken broth. Cover and simmer over low heat about 15 minutes.
Add oranges, olives and reserved sausages; reheat.

Suggestion

Always prick sausages before blanching, this is the best way to degrease them. They will be more moist and flavourful.
