Recipe ingredients

  • 1/4 cup (60 mL) extra light olive oil *
  • 8 upper chicken thighs, boned and sliced in thin strips
  • 3 zucchinis, minced
  • 1/4 cup (60 mL) pesto
  • 1/4 cup (60 mL) chicken broth*
  • 1/4 cup (60 mL) finely chopped parsley

Preparation

In a frying pan, heat 2 Tbsp. (30 mL) oil; brown chicken thighs until golden, about 10 minutes. Keep hot.
In the same frying pan, heat remaining oil; brown zucchinis until golden.
Add pesto and chicken broth; simmer 2 minutes.
Add parsley; mix; serve with chicken thighs.

Suggestion

Upper chicken thighs are an economy cut that should be better known, they are very tasty. You can add rosemary to enhance the flavour.
