Recipe ingredients
- 3 Tbsp. (45 mL) vegetable oil*
- 1 cup (250 mL) white leeks, thinly sliced
- 1 onion, chopped
- 2 medium-sized potatoes, peeled and diced
- 1 1/2 cup (375 mL) broccoli, diced
- 1 1/2 cup (375 mL) cauliflower, diced
- 1 cup (250 mL) carrots, peeled and diced
- 8 cups (2 L) vegetable broth
- 1 cup (250 mL) 15% cream
- Salt and pepper to taste
- 1/2 tsp. (2 mL) ground nutmeg
- Croutons to taste*
- Cheese of your choice, grated, to taste*
Preparation
In a large saucepan, heat oil and brown leeks and onion for 3 minutes.
Add potatoes, broccoli, cauliflower, carrots and vegetable broth.
Bring to a boil.
Over medium heat, cook uncovered for 25 min.
Blend soup in electric blender and return to saucepan.
Add cream and seasoning.
Continue to cook for a few minutes to reheat soup.
Suggestion
Just before serving, garnish soup with croutons and cheese.* We recommend Selection and Irresistibles products.
