Recipe ingredients
- 1/4 cup (60 mL) extra light olive oil *
- 4 lamb thigh steaks, bone-in
- 1 raddichio
- 1 red pepper, in strips
- 1 green pepper, in strips
- 16 white mushrooms, sliced
- 2 tsp. (10 mL) dried mint
- Salt and pepper to taste
Preparation
In a frying pan, heat 1 Tbsp. (15 mL) oil and cook lamb 6 minutes per side for medium. Keep hot.
Cover the bottom of a large serving platter with raddichio leaves; arrange the strips of pepper and the mushrooms.
Add dried mint, salt and pepper; drizzle with the rest of the oil. Serve.
