Recipe ingredients
- Fruit salsa
- 2 peaches, pitted and diced
- 1 pink grapefruit, peeled, pith removed and cubed
- 1/4 cup (60 mL) canned crushed pineapple*, drained
- 2 green onions, minced
- 1 tbsp. (15 mL) chopped fresh chives
- 2 tsp. (10 mL) Irresistibles extra virgin olive oil*
- Juice of 1 lime
- 4 fresh salmon steaks
Preparation
In a bowl, mix topping ingredients together. Refrigerate 30 minutes.
In a skillet or on the barbecue, cook steaks 4-5 minutes per side.
Serve salmon with fruit salsa and lemon-pepper pasta.
